Mini ones have all the taste without the sharp bits, so they're popular with kids. They fry up well, and if you just want to give them a light toast only, are good for salty crunch in BIBIMBAP or eggs or salads.
Medium ones are pretty much all-purpose, you can cook with them or boil them to make broth. This is my preferred size to snack on.
Large ones are usually used for broth. Just put a handful (or a bit less) and boil for 10 minutes in water to get a nice, seafood-y broth to use in soup.
