Cold air stays inside the Master-Bilt DC-10D ice cream dipping cabinet because of the 2.25 inch urethane insulation throughout the cabinet. The six stainless steel hinged lids have a gasket around their perimeters to keep cold air inside. The cold-wall evaporator is used to keep the interior cool instead of using a fan to blow cold air around the cabinet.
