Use up that leftover turkey with this turkey bolognese! Shredded turkey in a lovely rich ragu. Ready in 30 minutes!
The recipe is almost exactly the same as my regular Spaghetti Bolognese - why change it if it works!

Ingredients:
1 tbsp olive oil
1 onion - peeled and finely diced
2 cloves garlic - peeled and minced
1 carrot - peeled and finely diced
3 chestnut mushrooms - finely diced
400g leftover cooked turkey - finely chopped or shredded
½ cup (120ml) red wine
3 tbsp tomato puree
1 tsp dried oregano
½ tsp dried thyme
1 tbsp Worcestershire sauce
1 chicken stock cube - crumbled
28 oz (2 x 400g) canned finely chopped tomatoes
½ tbsp granulated or caster sugar
½ tsp salt
½ tsp black pepper
To serve:
Cooked spaghetti (swap for pasta shapes if you prefer)
A few small fresh basil leaves
grated parmesan
