Oak is currently a quite controversial topic in the wine world. There was a time when it was used sparingly, and many wine writers and critics would criticize winemakers. Now, we are headed in the opposite direction, with the use of oak, especially new and small oak barrels, being reduced to a minimum or reserved for the wines that truly benefit from it. So, let's get geeky and talk about oak and what influence, if any, it has on wine.
