INGREDIENTS:
(BREADCRUMB STUFFED MUSHROOM)
• Mushrooms 200gm
• Fresh breadcrumb from 4 bread slices
• grated cheese of your choice 1 cup
• finely chopped coriander leaves 1/2 cup
• salt as required
• black pepper powder 1 tsp
• minced Garlic or garlic powder
• olive oil
Procedure:
• Clean the Mushrooms and remove the stem.
• Scoop out the insides of mushrooms carefully with a butter knife or spoon to make a little pocket in the mushrooms. Keep it aside.
• Finally chop the mushroom stems .
• Take 4 bread slices and take out the sides. Blend the breads in a blender to make fresh breadcrumbs.
• Preheat the oven to 200C or 400F.
• In a mixing bowl add breadcrumbs , chopped mushroom stems, coriander leaves, grated cheese, salt , pepper powder, olive oil, minced garlic or garlic powder which ever is available.
• Mix properly.
• Take a spoon full of the mixture and stuff in the mushrooms.
• Repeat for all the mushrooms.
• Cover a baking tray with aluminium foil and grease with generous amount of olive oil.
• Spread the stuffed mushrooms on the baking tray and bake in the oven at 200 C for 25-30 minutes until golden and crisp.
• Remove from the pan and serve hot.
(BREADCRUMB STUFFED PEPPERS)
INGREDIENTS:
• Peppers
• Mushrooms 200gm
• Fresh breadcrumb from 4 bread slices
• grated cheese of your choice 1 cup
• finely chopped coriander leaves 1/2 cup
• salt as required
• black pepper powder 1 tsp
• minced Garlic or garlic powder
• olive oil
PrROCEDURE:
• Clean the peppers and chop off the stems.
• Cut the peppers from the middle in lengthwise and scoop out the seeds.
• Stuffed some of the mushroom mixture in the peppers and bake in the oven at 200C fro 30 -35 minutes until golden and crisp.
• Remove from the oven and serve hot with some teriyaki sauce or mayo.
