This keto friendly butter pound cake (butter cake) is 100% gluten free made with coconut flour. Its texture will be moist and soft. Super easy to make and ready in less than 40 minutes.

Ingredient
• 60g salted butter, melted.
• 60ml heavy cream.
• 20g allulose or sweetener of choice.
• 3 large eggs.
• 1g liquid stevia extract (~ 25 drops).
• 1 tsp vanilla extract.
• 60g coconut flour.
• 1 tsp or 3g baking powder.
Method
1. Preheat oven to 170°C
2. In a mixing bowl, mix melted butter and heavy cream using mixer until creamy.
3. Add in allulose and mix well.
4. Add one egg at a time and mix.
5. Add in liquid stevia extract and vanilla.
6. Sift coconut flour and baking powder into the mixing bowl. Then mix with mixer until well combined.
7. Pour into a mini loaf tin lined with parchment paper.
8. Bake for 30 minutes.
