Michelin star chef Elena Arzak, from Arzak in San Sebastián, part of Spain's Basque region, creates two dishes from the Arzak menu. The first is a hake dish which is served with green sorceress, a green like dome that is placed over the fish. This is followed by the big truffle, both of which appear at the restaurant and play homage to the region’s cuisine, while also being representing today’s cuisine, being creative and inventive in their approach.
